Ayam Masak Kicap Madu or in English Chicken cooked in honey soy sauce. Is a classic Malay dish featuring yummy crispy, fried chicken simmered in a sweet, savoury, thick and dark soy based sauce.  Its dark soy sauce is just so intoxicating you just cannot stop eating, you will want to enjoy this with a lot of rice to soak up all that yummy sauce. A truly divine and sinful dish that would make for the perfect dinner. 

This dish can often be found in "mixed rice" stores featuring well rice and a range of dishes that you can choose from veggies, to fish, to eggs to well this yummy soy sauce based chicken. Making the perfect lunch or dinner or sometimes even breakfast if you got a long hard day ahead of you. 

It is so quick and easy to make with minimal clean up, work and any efforts at all. Keep this recipe in your recipe book and cook it up for your friends, family or even just for yourself.

SOY SAUCEEEE

Ingredients 

1.

1 Whole Chicken

2.

1 Medium Yellow Onion

3.

6 Cloves Garlic

4.

1 Thumb Size Piece of Ginger

5.

1 Fresh Red Chili

6.

3 Star Anise

7.

1 Stick of Cinnamon 

8.

5tb All Purpose FLour

9.

4tb Dark Soy Sauce

Begin by breaking down your chicken into lovely parts or just get your butcher to do it for you. Or just buy all drumsticks, which ever you prefer.

Generously coat your chicken with some all purpose flour, making sure each and every bit of it is dusted.

Heat up a pot of oil to medium high heat and gently set your chicken into it and let it fry from 8-15 minutes depending on the part. Just make sure it is cooked, you don't want any raw chicken in this dish.

Whilst your chicken is cooking begin peeling and quartering 1 yellow onion and peel 6 cloves of garlic and 1 thumb size piece of ginger. Give your ginger a little cut up.

In a blender add in your onion, garlic, ginger and 1 whole chili [do remove the seeds if you don't want it too spicy], add in just a little bit of water just to get it blending into a smooth paste.

Once your chicken is done cooking, set them aside. In a wok add in some oil and heat it up to high heat, once hot add in 3 star anise and 1 cinnamon stick and your spice blend. Give it a quick fry till fragrant. 

7.

Add in 4tb of dark soy sauce, along with 2tb of honey and salt to taste. You will have to further balance your sauce with more salt and honey. Once you are happy with your sauce add in your chicken and give it a good mix. 

Extra:

Top it off with some spring onions and chopped chili for that extra flare and aesthetics.
