BOXING CHICKEN

Ok so I am not entirely sure if Boxing chicken is a Malaysian dish or a western dish. But this dish was widely popular all over Malaysia espacially in hotel buffets they have this all over and they were just so yummy and fun to eat. 

So if you do not know what did is it is essentially a chicken cutlet of chicken with potato deep fried with a little chicken bone sticking out of it making it easy for eating. To put it simply it would be exactly what you would imagine a cartoon chicken drumstick to be. 

A quick easy way to enjoy some chicken be it for lunch dinner or even for breakfast. Not to mention it is probably one of the most fun things to make and eat.

How to get your Dream Drumstick?

1.

Begin by sending your chicken drumsticks into an oven at 180°C for 15-20 minutes till they are fully cooked.

While your drumsticks are cooking peel and chunk your potatoes into little chunks and set them to boil. 

Ingredients

8 Drumsticks

500g Potatoes

3.

2 Eggs

4.

1tb Smoked Paprika

5.

1ts Cumin

6.

1/2 Cup All Purpose Flour

7.

1 Cup Breadcrumbs

Drain and mash up your potatoes and season it with salt and pepper to taste.

Once your chicken is fully cooked do your best to strip your drumsticks off all its meat and make sure to keep the bones.

Mix in your chicken with your potatoes along with 1tb of smoked papripka and 1ts of cumin powder and salt and pepper to taste. 

6.

Evenly portion out 8 portions of your chicken cutlet mixture and wrap and mold your cutlets around your drumsticks. 

7.

Set them onto a plate or tray and stick them into the freezer for at least 30 minutes or more just to allow it to solidify so you are able to work with it better.

Prepare up 3 bowls, 1 with 2 beaten eggs in, 1 with some all purpose flour and lastly a bowl of bread crumbs.

9.

Before you start breading heat up a pot of oil to high heat. Ready for you to drop in your chicken straight in. 

10.

With your little drummets gently coat them with flour followed by egg then by bread crumbs and straight into the oil for a gently fry till golden brown and crispy. 

11.

Rinse and repeat.

12.

Serve up with a side of salad and some dipping sauce i recommend the famous ketchup or even some gravy.
