What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.
Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
BREAKFAST HASH
Everyone has thier perfect way of starting the day, some enjoy going for a run, some do yoga, and some just start the day by getting a little extra shut eye. But to me, my personal favourite way of starting my day is through having a lovely meal to get me right out of bed.
Today I present to you, a humble breakfast, filled with crispy nuggests of hashbrown, chargrilled spinach, sausage, mushroom, cherry tomatoes and bacon. Now doesn't that sound like the perfect morning to you? Perfectly enjoyed with a side of morning coffee, juice or tea. Now get out of bed and into the kitchen and whip up your perfect morning!
How do you Want to Get Up Today?
Ingredients

2 Medium Potatoes

Cherry Tomatoes
3.
1tb Flour (All Purpose)
4.
4 Cumberland Sausages
5.
4 Rashers of Bacon
6.
2 Cups of Spinach

Closed Cup Mushrooms
1.
Peal the skins of 2 potatoes and start to shred them into a bowl. If you don't have a grater then finely slice the potato into fine little stick.

Attempt to squeeze as much of the potato juice out of the potato as possible. You want the potato to be as dry as possible to get that crunch that we all love.

Add in 1tb of flour just to help bind the potato together.

Season your potato with some salt and black pepper.

In a pan heat up enough oil on medium high heat to cover the surface of the pan.

Start to roll your potatoes into little hashbrown nuggets, you should be able to get 8-12 golf ball size nuggets out of this.

Gently fry them and roll them around when you start to see the edges get nice and KRISPEEE.

Once cooked, should take between 5-8 minutes. Set aside to cool.

While your hashbrowns are cooking, slice up some mushrooms, half your cherry tomatoes and chunk up your bacon and sausages into bite size pieces.

In a pan add in a little bit of butter over high heat, once hot add in your bacon and sausage to cook.

Once almost cooked, add in your tomatoes, mushrooms and spinach and continue to cook them over medium high heat.
12.
Season with salt and pepper to taste and plate up a lovely bowl, don't forget to top it off with your crispy hashbrown nuggets.
Extra
Add on a poached egg or a sunny side up egg, and dunk your hashbrowns into the yolks for an extra yum.
