What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.

Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
BURST TOMATO PASTA
The burst tomato pasta aside from its name really is a gift and a treat! Not only is it easy but it is such a simple dish and the flavours are just soooooo good and not to mention clean as well. Enjoying a huge bowl of this pasta will not leave you stoggy and feeling like you ate a cow. Sweet, tangy and vibrant, if summer were to have a dish this would be it!

Buttt this does not have exclusively be a summer dish, it is so quick and easy it could be a dish for any time of the year, any time of the day. Perfect for taking to work, a quick lunch or even a semi-sinful late night snack depending on how much cheese you decide to go for.

Ingredients

Spaghetti

Cherry Tomatoes
3.
1/2 Cup of Tomato Passata
4.
2 Cloves of Garlic
5.
1ts of Dried Oregano
6.
Fresh Basil

Parmesan Cheese
1.
Bring a pot of water to a boil
2.
Peel and finely slice 2 cloves of garlic and set aside.
3.
In a pan over medium heat add in some oil and your garlic cloves followed by a 2 handfulls of washed cherry tomatoes.

Give it a good fry till fragrant, add in a splash of water, cover with a lid and let the heat do its thing.

Once your cherry tomatoes are soft or on the verge of bursting (about 4-5 minutes) add in 1/2 a cup of tomato passata and give it a good mix. Put the lid back on and lower the heat to bring the sauce to a gentle simmer.

Add your spaghetti to cook according to package instructions or to your own preference.

Once your spaghetti is a minute away from being done season your sauce with 1ts of dried oregano, finely choped fresh basil, some or a lot of parmesan cheese, salt and pepper to taste.
8.
Add in your pasta and along with a 1/4 cup of pasta water and give it a good mix together.
9.
Plate up with some fresh basil and some extra cheese!!!!!!!!!!!!!!
