3.

In a pot add in 1.5tb of oil and bring it to medium heat.

4.

Add in 1.5tb of all purpose flour and mix till a rough dough forms. Lower the heat to low and slowly drizzle in 1.5 cups of milk, mixing well to ensure no lumps form.

5.

Add in 1ts of garlic powder and 1ts of smoked paprika. Grate in as much cheese as you want, I went with 1 cup of mature cheddar cheese.

6.

Mix well and you should have a nice thick cheese sauce. Season with salt and pepper to taste and if its too thick add a bit more milk, if its too thin let it bubble away a bit longer.

7.

Toss your cauliflower with the cheese sauce and coat well, place them into a baking tray and sprinkle 1 cup of bread crumbs and some more CHEESE!

8.

Place into a preheated oven at 180°C for 45 minutes - 1 hour, till the cheese is bubbly and crisp on the edges.

9.

Remove and let it cool for 5-10 minutes. You don't want to burn your mouth.

Serve up as a cheesy side to all your wonderful Christmas meals. Be warned, this ain't a diet dish.
