HAINANESE CHICKEN RICE

How to Make Da Rice of Da Chicken?
1 Whole Chicken
1 Thumb Sized Ginger (Sliced)
1 Whole Scallion
3tb Sesame Seed Oil
1 Whole Onion
3 Cloves Garlic
2 Cups Rice
1tb Light Soy Sauce (Lee Kum Kee)
1tb Oyster Suace (Lee Kum Kee)
Coriander, Fried Shallots
Peel 1 thumb sized piece of ginger and Chop it up into thin slices, peal and half an onion and peal the skin off 3 cloves of garlic.
Now you got to get FREAKY with your chicken, gently spread salt over your chicken and give it a nice massage. You want a nice smooth chicken.
Rinse and wash your chicken, got to have a nice clean chicken right?
SPREAD the lovely legs of your chicken and stuff the sliced ginger, onion, garlic and 1 whole scallion into your chicken.
Place your chicken into a large pot and cover with enough water to cover the chicken. Generously salt the mixture (like a lot of salt)
Bring the mixture to a boil and reduce down to a simmer for 30 minutes or till cooked.
Carefully remove the chicken from the pot and pat dry. KEEP THE BROTH!!
Rub the chicken with some sesame seed oil to keep the chicken nice and moist.
Prepare and wash 2 cups of rice add in 2 cups of the lovely golden chicken broth and some fresh ginger. Cook the rice in your preferred way.
Plate and serve, DON'T forget the lovely broth which is now a lovely home made soup that goes perfectly well with your rice and chicken.
Extra: Top it off with some chopped coriander and fried garlic for a lovely time. Now your sexy chicken is ready to enter your mouth.
