COTTAGE PIE

When tis season to be jolly and happy there is nothing better than a good warm pie to just warm up your belly and body and protect you against the cold cold weather that is out there to chill you all the way to your bones. 

If you have never had a cottage pie before it is a very simple rich, flavourful beef based pie lined with a sweet yummy carrots with a crispy soft fluffy mashed potato top and of course with a "healthy" grating of cheese. The beauty of the cottage pie is the replacement of a classic flakey crust with a soft rich yummy mashed potato crust that just soaks up all the yummy beefy flavours. 

It is one of the easiest pies to make needing close to zero effort to make a meal to feed an army. So for your next Christmas meal plan to make a pie, a quick easy meal to feed all. Best part is that any left overs can easily be kept and reheated with ease.

How to Warm up your Soul?

1.

Begin by prepping your vegitables. Peel and mince your ontions, peel and mince your carrots into chunks or small piecces all up to you, peel and chunk up your potatoes.

2.

Set a pot of water to boil and gently set your potatoes in to go for a nice hot swim till soft.

Ingredients

1Kg Beef Mince

4 Carrots

3.

2 White Onion

4.

Cheeseeeee

5.

1Kg Potatoes

6.

1/4 Cup Worcestershire Sauce

7.

1/4 Cup Ketchup

8.

1tb Mustard

9.

1 Bay Leaf

10.

2tb Butter

It is going to go quick now so set your oven to preheat at 180°C.

In a pot or large pan add in some oil and heat it up to medium high heat. Once hot add in your onions and get them nice and fragrant.

Once your onions are singing with lovely smells add in your minced beef, carrots and 1 bay leaf. Give it a good stir around and let it slowly cook on medium high heat.

Once the beef has browned add in a 1/4 cup of Worchestershire Sauce (idk how i am ever gonna pronounce that) , 1/4 of ketchup and 1tb of mustard just to add in some nice heat. Mix well and let this whole pot of yummy goodness bubble away on medium heat.

Whilst your filliing is bubbling away drain your potatoes and give them a good mash up. You want a nice smooth creamy mash potato, once mashed up add in 2-4tb of butter depending on how much "sin" you would like. Season well with salt and pepper to taste.

Season your cottage pie filling with salt and pepper to taste.

Bring out your favourite baking tray gently dump in your pie mixture evenly spread it around. Then gently spread your mash potatoes evenly over the pie filing and with a spoon smooth down the top. 

10.

Now with a fork start creating little mountains all over your pie this will then turn into little crispy bits. Lastly give a good grating of cheese over the whole pie and into the oven for 10-15 minutes till the top turns golden brown.  

11.

Give the pie about 5 minutes to cool off and allow the juices to be reabsorbed back into the beef and the potato. 

12.

Serve up and enjoy.
