What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.
Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.

Crispy Roasted Potatoes

What is the perfect side dish for any Christmas meal? Of course it has to be roasted potatoes right! Well today we have a treat for you. It will yield you the fluffiest and crispiest potatoes you will ever have. It goes perfectly well with any roast dinners and makes a complete set to any Christmas meal.
With a few quick simple changes to your normal roasting methods you will have the most flavourful and crunchy roast potato you will ever have. It is almost like eating a little potato wedger.

How to Make it Extra Krispee?

Peel and chop your potatoes into little bite size pieces or into large chunks all up to you.

Add your little potato chunks into a pot of simmering water and simmer them till they are soft. You should be able to poke a knife through one of them with ease.
Ingredients

500g Potato

2tb Olive Oil

1tb Mixed Herbs

Drain your potatoes and place them in a large bowl.

Let your potatoes air dry for 2-3 minutes to get rid of excess moisture which will make the potatoes less crispy.

Add in 2 tablespoons of olive oil, salt, pepper and 1 tablespoon of mixed herbs.

Give the bowl a good shake up you want to create this little layer of mash potatoes around your potatoes, which will turn into little crunchy bits later on. Don't be scared if your potato breaks, its totally normal.
7.
Lay them out onto a baking paper lined tray and into a preheated oven at 180°C for 15-20 minutes till crispy and golden brown.
8.
Serve and enjoy with your favourite roasties.
