HASSELBACK POTATOES

The Hasselback potatoes of in Swedish the Hasselbackpotatis is the swedish way of roasting potatoes and it's name came from the Hasselbacken restaurant in Stockholm. This humble potato was a reference to the traditional red hut in the middle of Hazel(Hassel) on a quiet slope(Backe) which very closely resembles the ridges of a hasselback potato. 

 

Enough history and fun facts this is sure to be a great addition to any meal. These small little cuts and ridges along your potatoes is a sure fire way to get in extra crunch, flavour and just all around yummy goodness deep into the heart of a warm yummy potato. 

Here we are gonna upgrade it a little bit with a nice thick cheesy sauce draping and smothering all over each and every crevice of your potato giving you a once in a life time experience of enjoying a simple humble potato. Oh and how can I forget a little sprinkling of bacon just to top it all off for them extra sin points.

Potato to a Hasselback Potato?

1.

With a sharp knife gently slice your potato as thin or as thick as you want, making sure to leave the bottom just a little bit uncut so it holds nicely together creating the hasselback arc. 

2.

Gently sprinkle some oil over your potatoes and season with some salt and pepper. Place them into a preheated oven at 180°C for 20-30 minutes or till cooked through. 

Ingredients 

1.

8 Medium Potatoes

2 Cups Whole Milk

3.

2tb Butter

4.

1/2 Cup Cheddar 

5.

1/2 Cup Mozzarella 

6.

1ts Garlic Powder

7.

1ts Paprika

Parsley

Bacon

In a pot melt 2tb of butter on medium heat, once melted add in 2tb of flour and mix well. Lower to a medium low and slowly drizzle in 2 cups of milk whilst whisking to create a smooth creamy white sauce.

Add in 1ts of garlic powder, 1ts of paprika and all your cheese... more if you want... I can't stop you.

5.

Mix well and season to taste with salt and pepper. You now got yourself a lovely cheese sauce.

Take out your potatoes and spoon in half of your cheese sauce over your potatoes try to get it into each and every crack and send it back into the oven for the remaining time for it to cook. 

7.

Whilst your potatoes are cooking fry up as little or as much bacon as you want. You want extra crispy slices of bacon.

Once your potatoes are cooked through spoon over your remaining cheese sauce and let it char back in the oven at 250°C or your max setting for 2-5 minutes till it develops a nice brown top.

Lastly sprinkle over your bacon bits some parsley and dive straight into one of the best and easiest potato sides you will ever make.
