What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.
Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
LAMB CURRY
But not just any normal lamb curry, this is infused with the lovely fragrance of coconut milk. Juicy, tender chunks of lamb meat marinated with lovely aromatic spices ready to fill your lovely tummy.
A super easy recipe for all to cook, this is a 10 minute prep 50 minute sit back and watch it bubble away recipe. You can leave it on the hob to slowly bubble away as you carry on with your life, perfect for breakfast, lunch or dinner. Paired with bread, rice or whatever you wish.
How to Spice up your Life?
Ingredients

500g Lamb Chunks

1 Onion Sliced
3.
3 Potatoes
4.
1 Tin Coconut Milk

4tb Curry Powder
6.
1 Star Anise
7.
1 Cinnamon Stick
8.
3 Cardamoms
9.
4 Cloves
10.
Pinch of Chili Powder

In a Pot add a drizzle of oil enough to cover the base of the pot and heat on medium high.

Add in your lovely sliced onions and give it a nice stir, frying till fragrant.

Add in 1 Star Anise, 1 stick of cinnamon, 3 cardamoms and 4 cloves and continue to fry till all the lovely aromatics fill your kitchen.

In a bowl add 4tb of curry powder and a pinch of chili powder (Depending on how spicy you like it) and enough water just to form a lovely paste.

Lower the pot to medium low heat and add in your curry paste and lambs chunks and mix till well combined.

Add in 1 tin of coconut milk and enough water or stock of your choice to full submerge the lovely ingredients.

Let the lovely concoction of spices and meat bubble away on medium low heat for 30 minutes or longer (Pssst LONGER the Better).
8.
Peel and chop up some potatoes and add it into your lovely curry and continue to simmer for another 20 minutes.
9.
Add salt to taste and serve up your lovely spiced aromatic curry with some rice or naan.
