What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.

Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
MATCHA TIRAMISU
A classic tiramisu is a coffee-flavoured Italian dessert, made out of a little biscuit called ladyfingers soaked in lovely powering coffee, layered with a thick creamy flavourful mascarpone cream mixture. Oh an of course with a healthy serving of chocolate.

But with our developing world, sometimes we get bored with the old style. It is time to bring in some new flavours. Lets bring in some flavours from Japan, the lovely Matcha! A new taste to an Italian classic. A thin layer of choclate at the bottom, the lovely coffee flavoured lady finger, a layer of matcha infused cream, another layer of biscuit and the classic mascapone cream to finish it off.

Give this easy recipe a try and experience Japanese flavours in the form of an Italian classic. Trust me you will not regret making this, the hardest part is waiting for this dish to come together in the fridge.
MATCHA TIME
1.
Start by making your favourite coffee, a nice strong expresso would work wonderfully you wil need about 2 cups worth.

While your coffee is cooling, in a large bowl seperate 6 egg yolks into a heat resistant bowl.

Set your heat resistant bowl over a pot of simmering water, making sure the water doesnt touch the bowl. Add in 3/4 cup of sugar and gently whisk till the sugar is fully dissolved.
Ingredients

24 Lady Fingers

6 Eggs

1 Cup of Double Cream

2 Cup of Mascapone

2tb Matcha Powder

150g Dark Chocolate
7.
35g Unsalted Butter
8.
2 Cups of Strong Coffee
9.
Coco Powder
10.
3/4 Cup Sugar

Remove the pot from the heat and with a hand mixer mix your egg yolks till you get stiff peaks should take 5-8 minutes.

In another bowl add in 2 cups of mascapone cheese and with a hand mixer, mix till smooth.

Gently fold in your mascapone cheese into your egg yolk mixture till you get a smooth mixture.
7.
In a bowl pour in 1 cup of heavy cream or whipping cream and gently whip it with a hand mixer till you get soft peaks and gently fold that into your mascapone mixture.

Add in 1 cup of double cream mix well then drop in your little nuggets of chicken and mix well making sure it is well coated.

Seperate half the mascpone mixture and mix in 2tb of matcha powder.
10.
In a heat resistant bowl over a pot of simmering water melt together 35g of unsalted butter and 150g of dark chocolate.

In a 8x8 inch baking tray line it with some baking paper and pour your chocolate and evenly spread it around.
12.
Dip your lady finger into your coffee mixture and lay them ontop of your chocolate till you get an even layer of lady fingers.
13.
Gently spread your matcha cream over, followed by a sprinkling of cocoa powder, another layer of coffee dipped lady fingers and your regular mascarpone cream.
14.
Cover your tiramisu with some cling film and set it into the fridge for at least 3 hours or over night to set.
15.
Gently sprinkle some matcha powder over and enjoy.
