What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.
Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
OKONOMIYAKI
The famous pizza of Japan. A lovely base of cabbage riddled with a batter of egg and flour just to bind it all together. Paired with lovely layers of bacon at its very base. To top it off an extremely addictive savory sweet sauce and who can forget the dancing bonito flakes.
It is a lovely dish to be eaten any time of the day and can be easily customised to fit the meal of the day or your preference just like a pizza, you can top it off with anything you like .
How to Make an Asian Pizza?
Ingredients

1 Cup Flour (All Purpose)

1/4te Baking Powder
3.
1/2 Head Cabbage
4.
8 Slices Bacon
5.
3 Eggs
6.
2tb Oyster Sauce
7.
4tb Ketchup
8.
1tb Light Soy Sauce
9.
1/5tb Sugar
10.
Bonito Flakes

Begin by removing the core of 1/2 a head of cabbage. Then you got to channel your inner NINJA and mince the cabbage as small as possible.

In a large bowl add in 1 cup of flour, 1/4te of baking powder, and 1/4te of salt give it a quick mix then add in 3 eggs and mix well.

Slowly drizzle in 1/4 cup of water and mix well till a smooth pancake like batter is formed.

Now slowly add in bits of your chopped cabbage bit by bit and mix well. Yes it is a lot of cabbage but trust me it will work.

Heat up a flat pan with a little bit of oil on medium heat.

Using your hands or a spoon scoop some of your mixture into a circle on the pan about 2.5cm in height or smaller. The size is all up to you. If its your first time start by making a smaller one first.

Using a spatula slowly shape your Okonomiyaki and press down gently to get even browning. Layer strips of bacon, or pork belly or protein of choice and Place a lid on top and let it cook for 5 minutes.

NOWWW the HARD part. FLIP it and if it breaks its OK just SQUISH it back together. Slowly shape it back and gently press down, then cover once again for another 5 minutes.
9.
While its cooking combine 2tb of oyster sauce, 4tb of ketchup, 1tb of light soy sauce and 1.5tb of sugar with 2te of water to form the OKONOMIYAKI sauce.
10.
Gently plate up your Okonomiyaki spreading some of your lovely okonomiyaki sauce over along with some mayo and the dancing BONITO FLAKES.
Extra: It is yours to customize add in octopus, squid, cheese, whatever you wish this is the base. Swap the bacon for beef strips, chicken strips whatever you wish. Experiment and share.
