Pesto Baked Chicken

When you get bored of the classic Pesto Pasta give this super simple recipe a try! All you need is 2 ingredients; Pesto and Chicken. Super easy and super yummy. Some of you guys may be put off by the bright green colour but I assure you, the flavour packed into that sauce is just amazing! A quick simple recipe for a busy weekday lunch.

To make this dish even faster you could just buy a simple pesto sauce from the store, but WHO WANTS THAT, especially when you can make your own fresh pesto sauce that is garunteed to be a 100% better than store bought stuff. So give this super quick recipe a try and you will not regret it.

Pisto Pesto Preto

To kick start this SIMPLE RECIPE, get a pan with a little oil on HIGH Heat. Pre heat your oven to 180°C.

Ingredients

2tb Pesto Sauce

Chicken Thigh/Breast

Parmesan Cheese

Whilst the pan is heating up, lightly season your chicken with salt and pepper.

Once the pan is SUPER HOT, gently add your chicken into the pan. Let it be for 1 minute before flipping, you want to get some nice brown golden crust on it.

Once all sides of the chicken has been beautifully turned golden brown, place it on a baking paper lined baking tray.

Generously spread about 1-2tb of pesto sauce over your chicken, creating a nice green fragrant layer.

6.

Into the oven for 10-15 minutes till the chicken is fully cooked through and the pesto sauce has gotten a nice dark brown colour on it.

And there you have it! fresh pesto chicken within a couple of minutes. Serve up with some fresh basil leaves and maybe some extra cheese with a side of carb of choice.
