


The classic orange hero, the humble root vegetable, the CARROT. Not only is it amazing for your eyes, helps reduce muscle degeneration and filled with great anti-oxidants and vitamins, it is also super sweet, delicious and so versatile.

So why not have all these nutrients made into something that goes down easily? Why not make it into a soup? Yes I know it is not everyday that you see carrot soup, you have seen carrot cake, carrot juice, but let me introduce you to the simple humble carrot soup.

It is so easy to make, it takes little to no effort at all to make this. It is filling, nutritious and super easy to make. Great for breakfast, a light lunch, or a starter or dinner. Great for when you are sick or when you have to feed a crowd.
Ingredients
8 Medium Carrots
1 Onion
5 Cups of Stock of Choice
1 Cup of Cream
STEPS
Start by peeling and chunking up your carrots and onion.
In a pot add in a little bit of oil and fry off your onions on medium heat till soft and fragrant.
Add in your carrots along with 5 cups of stock and bring it to a boil for 10-15 minutes or till the carrots are very soft.
Using an immersion blender or a regular blender add in your soup components and blend to your desired smoothness.
Add in 1 cup of cream and let it bubble away on low heat for another 5-10 minutes.
Season with salt and pepper to taste and serve up a nice big bowl.
Top it off with some extra cream and some more black pepper for them extra style points.
