300g Pork Belly
3 Cloves of Garlic
1 Green Bell Pepper
1.5tb Dark Soy Sauce
1tb Lao Gan Ma Chili Oil
2tb Shao Xing Wine
Begin by pealing and quartering 1 onion and mincing 3 cloves of garlic.
Chop your bell pepper into bite size pieces and mince your spring onions.
Cut your pork belly as thin as possible, this makes it tender and allows it to absorb all the lovely flavours.
In a wok or pan heat it up with some oil to HIGH heat.
Once hot add in your onions, garlic and the white bits of your spring onion. Give it a good fry and smell the aroma coming off it.
Add in your pork belly and give it a good fry till it is almost cooked, then add in your bell peppers and continue to fry for another 2-3 minutes.
Add in 1 tablespoon of Lao Gan Ma Chili oil or more if you want it spicier, 1.5tb of dark soy sauce, 1ts of sugar and 2tb of shao xing wine.
Give it a good mix together and let it cook for another 3-5 minutes. Serve up with some rice and enjoy.
