400g Boneless Chicken Thighs
10 Cloves of Garlic
1/2 Cup of Corn Flour
1 Cup of All Purpose Flour
1/4 Cup of Cheddar
1/4 Cup of Mozzarella
1/2 Cup of Double Cream
Begin by peeling and mincing 10 cloves of garlic. Yes 10, we want this to kill an army of vampires.
Chop your chicken thighs into little bite size pieces and place them into a large bowl.
Add your garlic, 2tb of corn flour, 2tb of vinegar, 1ts of salt and pepper and give it a good mix together. If its a bit dry add a bit of water, you want this to be like pancake batter consistency.
In a separate plate add in 1 cup of all purpose flour, 2tb of corn flour and 1/2ts of salt. Give this a good mix together.
Take your chicken coat it in some flour and set it aside, repeat with all. Let it rest for 5-10 minutes.
Crack 1 egg into your batter bowl and mix it all together. Dip your chicken back into the batter and coat it with flour once again and set it aside.
Heat up a pot of oil to high heat and begin your frying. Make sure not to over crowd your pan to allow your chicken to become extra crispy.
Let it fry for 3-5 minutes till golden brown and crispy, set aside to drain excess oil and repeat till you have a mountain of beautiful chickie babies
In a pan on low heat add in 1/4 cup of double cream along with 1/3 cup of any cheese you like, I went with a mix of cheddar and mozzarella.
Mix consistently till a thick cheesy mixture forms. Put it into a heat proof bowl and place it on the top rack of your oven at max heat to char the top.
