  1. Begin by slicing 1/2 a cup of kimchi into bite size pieces if they are in big chunks.

  2. In a LARGE BOWL add in 1 cup of all purpose flour, 1ts of salt, your kimchi and 1/4 cup of LOVELY STINKY kimchi juice.

  3. Crack in 1 egg, add in 1ts of gochujang (more if you like it SPICY) and 3/4 cup of water.

  4. Mix well till a smooth homogeneous RED mixture forms.

  5. In an 8-inch or whatever inch (size don't matter here) non stick pan add in a bit of oil on medium heat.

  6. Scoop in about a 1/4 cup of the mixture and spread evenly.

  7. You could now top the pancake with whatever toppings you wish, but normally it is just topped with large chunks of spring onions/scallions.

  8. When the pancake is almost cooked flip it over and cook for another minute.

  9. You should have a nice red-ish orange pancake. Serve with more chopped scallions.

Extra: Make a quick soy garlic dipping sauce to go with it. 1 Grated garlic, 1tb of light soy sauce, 1/2tb of sugar and 4tb of water. Heat up and mix well. Happy Cooking
