1/2 Cup of Kimchi
1tb of Gochujang
1 Cup of All Purpose Flour
1ts of Salt
3/4 Cup of Water
Begin by slicing 1/2 a cup of kimchi into bite size pieces if they are in big chunks.
In a LARGE BOWL add in 1 cup of all purpose flour, 1ts of salt, your kimchi and 1/4 cup of LOVELY STINKY kimchi juice.
Crack in 1 egg, add in 1ts of gochujang (more if you like it SPICY) and 3/4 cup of water.
Mix well till a smooth homogeneous RED mixture forms.
In an 8-inch or whatever inch (size don't matter here) non stick pan add in a bit of oil on medium heat.
Scoop in about a 1/4 cup of the mixture and spread evenly.
You could now top the pancake with whatever toppings you wish, but normally it is just topped with large chunks of spring onions/scallions.
When the pancake is almost cooked flip it over and cook for another minute.
You should have a nice red-ish orange pancake. Serve with more chopped scallions.
Extra: Make a quick soy garlic dipping sauce to go with it. 1 Grated garlic, 1tb of light soy sauce, 1/2tb of sugar and 4tb of water. Heat up and mix well. Happy Cooking
