Here is one of the easiest and probably tastiest side dish you could ever have for any indian meal. A blend of sweet crunchy long beans lined with soft fragrant onions all held together by a savoury fluffy omelette. Making for a quick and easy side dish to compliment your curry, rice and any other Indian dishes. ​ Not to mention it is also super easy to make with little to no effort needed to quickly whip out a simple and easy side dish that is sure to go well with anything. This is also a great dish to have for breakfast or even a quick and simple packed lunch for work or school.
Ingredients
150g Long Bean
8 Eggs
1 Onion
STEPS
Start by peeling and finely slicing 1 Onion.
Followed by going choppy chop on your long beans into small little bits, smaller the better.
Crack and beat up 8 eggs into a bowl.
In a pan add in some oil and begin to fry up your long beans and onions, season with salt to taste till the beans are just about cooked should take 3-5 minutes.
Set your bean and onion mixture to your side and portion out 1 portion back into the pan along with 1 portion of egg and just let it cook, season with a bit of salt.
Give your omelette a flip and cook for an additional minute and you are done. Rinse and repeat for a total of 4 portions.
