Cheese of Choice (mozzarella & American cheese recommended)
2tb of All Purpose Flour
Begin by simply cooking your noodles as per packet instructions but save all the seasoning packets. Just boil the noodles. Highly recommend Nong Shim Shin Ramyun.
Give the noodles a good rinse under some cold water to wash off any excess starch.
Add in 1/2 the seasoning packet because it is gonna be super salty. 1 egg and 2 tb of regular flour. Give the mixture a good mix together.
Divide the noodles into half.
Heat up a pan on medium heat with some oil.
Drop half of your noodle mixture into the pan and quickly spread the noodles to form a flat layer. Attempt to shape your desired shape using your spatula.
Let it sizzle away for a good 2 minutes till the bottom is golden brown and crispy. Give it a flip and let it cook for another 2 minutes. Set aside.
Repeat with the remaining half of the noodles.
Finely chop up some Kimchi (Psst you can find our home made kimchi recipe right HERE)
Reduce the heat of the pan down to a medium low.
Start to form your grilled cheese by laying the first piece of "bread" down layer with some cheese of your choice (I went with a 50,50 ratio of mozzarella and American Cheese), add in your chopped kimchi and some more cheese. Top it with the other slice of "bread".
Place it into the pan and place a lid over, let it cook for a minute before flipping. Let it cook till the cheese is lovely and gooey.
Plate up and enjoy.
Optional: You may want to hit the gym right after eating this because this is not a dish you would like to have on a daily basis. You can but I would be seriously concerned about your health.
