400g of Chicken Thighs
1tb of Corn Flour
1 Cup of Plain Flour
3tb of Vinegar
1/4 Bell Pepper
75g of Pineapple
4tb of Ketchup
2te of Sugar
1/4 a Cucumber
Chop your chicken into bite size pieces.
Prepare a marinade of 1 tablespoon corn flour, 3 tablespoons of vinegar, with a pinch of salt and pepper and mix with the cut chicken.
In a bowl, pour 1 cup of plain flour with a teaspoon of salt.
Drench the marinated chicken in flour and shake off any excess flour.
Prepare a pot with an inch of oil and heat it up.
Using a wooden chopstick poke into the pot of oil, once bubbles start to appear slowly lower pieces of your prepared chicken and cook for 5-8 minutes till golden brown and cooked through.
Drain on paper towel.
Sweet & Sour Sauce
Cut up your onion, bell pepper, pineapple and tomato into 1 inch pieces.
In a pan on medium heat add in a table spoon of oil and fry your onions and bell pepper till they are soft.
Add in your pineapple and tomato.
Add in 4 table spoons of tomato ketchup and 2 tea spoons of sugar with 3 table spoons of water.
Mix well till a thick glossy sauce forms.
Taste, if its too sour to your taste add a bit more sugar.
Toss your chicken in your lovely sauce.
Serve with a bowl of lovely freshly steamed rice.
