In a bowl crack and mix 3 eggs with a bit of salt.
On a medium High pan pour in your eggs and let it set, breaking it apart once it has set firmly (DO NOT SCRAMBLE THEM) you want nice big chunks of eggs.
Thinly slice your tomatoes and gently fry them on a medium heat pan with a lid. Leave and allow to steam for 2-3 minutes till they turn soft and mushy.
Attempt to crush the tomatoes with a spatula.
Pour in 4 table spoons of tomato ketchup, 2 tea spoons of sugar and a bit of water to thin the sauce slightly.
Once the sauce starts to bubble add back the eggs and coat evenly on low heat.
Leave covered for 2-3 minutes for the egg to soak up all the sauce.
Plate and serve, enjoyed on a bowl of freshly steamed white rice.
