Not another dainty little piece of toast, lets go big or go home! Or in this case go big and back to bed! If you are craving something a little heavier or the perfect healthy sunday brunch then I got you! 

The perfect salmon breakfast bowl, feature crispy panfried garlic infused salmon over a bed of spinach and sweet cherry tomatoes, with a side of garlicy pan fried mushrooms and how can it be breakfast without an egg! So to tie it all together we have a soft delicate, creamy poached egg to top it all.  So grab you pan some coffee and start making your way through this quick and easy recipe.

How do you Want to Get Up Today?

Ingredients 

1.

2 Salmon Fillets

Cherry Tomatoes

3.

Spinach

4.

4 Cloves of Garlic

5.

2 Eggs

Closed Cup Mushrooms

1.

Smash and remove the skins of 4 cloves of garlic. Finely slice or dice 2 of them and leave 2 whole.

Wash and half a hand full of cherry tomatoes, remove the stems of your mushrooms and give your spinach a quick wash.

In a pan add in some oil over medium high heat.

Pat your salmon dry and season with salt and pepper. Once the pan is hot place it skin side down and let it cook untouched for 4-5 minutes or till the skin is crispy.

Flip your lovely salmon and add in your smashed whole garlic cloves continue to cook for another 4-5 minutes till done. Remove from heat and let it rest while we cook the vegetables.

In a pan over medium high heat add in a bit of oil and your chopped garlic cloves and once fragrant add in your mushrooms. Season to taste and fry till cooked.

Once cooked set your mushrooms aside and in the same pan fry up your spinach and cherry tomatoes till softened. Season to taste.

Bring a pot of water to a gentle simmer and poach your eggs one at a time (should take within 3-5 minutes depending on your preference)

9.

Time to plate up! Lay down a bed of spinach and tomatoes, followed by some mushrooms and then lay your perfectly cooked salmon fillet on top and finally your poached egg.

Extra

Have some simple toast on the side to make it a complete meal to send you straight back to bed.
