SATAY PEANUT SAUCE

If you love peanut butter than this is for you. Crunchy, sweet and a little bit spicy. The perfect sauce for dipping your lovely perfectly charred satay sticks. 

Venders on the streets of Malaysia always serves this sauce or as we call it "kuah" with your satay. The little spicy kick, the sweetness and lovely crunchy peanut sauce just sticks so well with your satay. The perfect pair for your satay meal. It is also perfect for dipping onions and cucumbers.

Peanut Sauce? Yum Yum

Ingredients 

1.

1 Cup Raw Peanuts

2.

4 Cloves Garlic

3.

1 Red Onion

4.

2tb Sugar

5.

1 Lemon Grass

4 Dried Chili

3tb Palm Oil

1.

Lightly toast 1 cup of raw peanuts till TOASTY and set aside.

Peel and quarter 1 red onion.

3.

Peel 4 cloves of garlic.

4.

In a bowl add in 4-6 dried chilies (depending on how SPICY you like it) and add some boiling water over it.

In a blender add in your peanuts and blend will smooth or chunky (your preference) and set aside.

Blend up your chopped onions, garlic, lemon grass and drained dried chilies along with 3-4tb of water till a smooth paste forms.

In a pan on medium high heat add in 3tb of palm oil or regular oil.

Once hot add in your blended onion spice mixture and give it a gentle fry till fragrant and turns slightly brown. Should take about 5-10 minutes. 

9.

Add in your blended up peanuts and mix together with the spice mixture. Add in a bit of water till a saucy consistency is formed. 

10.

Add in 3tb of sugar and 1/2ts of salt and let it simmer away for 5-10 minutes. Adding water if it gets a bit too dry. 

11.

Serve up and DUNK away!
