What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.
Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
Sweet Potato Bread
Its more famous cousin the potato bun is a famous bun eaten for breakfast or a snack in Malaysia and Singapore. Born out of flour and potato this bun is SUPER AIRY and FLUFFY.
You would smack it all day and it will just keep coming back at you. With a thin line of custard on top for the added richness and sweetness this bun has it all made for tea and breakfast.
How to make some BUNS!
1.
Boil and mash till smooth and lump free you should have 1/2 a cup of mashed sweet potatoes

In a large Bowl. Add in 2 Cups of Flour, 1ts of salt, 1/2 a cup of sugar and 1/2 a cup of mashed sweet potato.
Ingredients

2 Cups of Flour (All Purpose)

180ml Whole Milk
3.
1/4 Cup Melted Butter
4.
1/2 Cup Sugar
5.
7g Active Dry Yeast
6.
1/2te Salt
7.
3 Eggs
8.
1/2 Cup of Sweet Potato
Dough Baby Time

Melt 1/4 cup of butter and add it into the bowl, with 80ml of milk, 1 egg and 1 packet of dry active yeast.

With a spoon start to mix the mixture together till a rough dough forms.

This is a very sticky dough so add a bit more flour and knead till it is no longer so sticky should take about 10 minutes of GOOD kneading.

Form the dough into a ball and into a bowl. Cover with plastic wrap and let the dough rise for an hour or till DOUBLED in size.
7.
PUNCH the air out and lightly flour your work surface.

Divide the dough into 16 equal pieces and roll into a smooth ball. Line them up slightly spaced apart on a baking paper lined baking sheet. Cover with cling film and let it rise again for another hour.
Itss Custard Time!
1.
In a bowl add in 1 egg YOLK, 1.5tb of Sugar, 100ml of milk, 1tb of plain flour and 1/2ts of vanilla extract. Mix well.

Sieve out the mixture into a pan.
3.
Heat the pan on medium low heat till a thick almost dough like mixture forms.
4.
Let the mixture cool and pump it into a piping bag.
The Last Step
1.
Beat up 1 egg till smooth.
2.
Gently brush over your buns with the egg. This will give it a nice smooth shiny finish.
3.
Start to pipe a HASH # shape on each of the buns using the piping bag with the custard mixture inside.
4.
Bake in a preheated oven at 180°C for 10-15 minutes till golden brown.
5.
Remove from the oven and smell the freshly baked bread.
Enjoyed with a hot cup of tea, coffee, or your favorite breakfast drink. If you find the buns to be cold and a bit tough, zap it in the microwave for 30 seconds to get back the fluffy buns you love.
