What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.

Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
TOMATO & FISH
SPAGHETTI
Plum, juicy little pieces of tomatoes all mushed up and crushed into a sweet, refreshing sauce. The perfect sauce to wrap around tender little pieces of fish, I am not a big fan of fish but this pasta really changes that. The fragrant onions and garlic masks out all the STINKY fishy smell and the sauce is just the perfect way to enjoy soft delicate chunks of fish.

I went with a simple fish pie mix of fish which had fillets of salmon, cod and smoked haddock. Feel free to use whatever fish you would like, I think this would go very well with some sardines or tuna. If you like a little heat in this dish add in a dash of chili flakes, not only will it infuse the fish with a nice spicy aroma but it will also brighten up the sauce.
One FISH, Two FISH, Three FISH?
1.
Start by peeling and SUPER finely mincing 1/2 a medium white onion. You want this to almost dissolve into the sauce.

Peel and mince 4 cloves of garlic.

Prep and wash 2 cups of spinach.
Ingredients

Spaghetti

2tb Olive Oil
3.
1/2 Medium White Onion

4 Cloves Garlic
5.
2 Cups Spinach

1ts Chili Flakes

300g Fish Fillets of Choice
8.
1 Tin Peeled Plum Tomatoes

Fresh Parsley

If your fish isn't cut up, chop it up into little bite size pieces.

Set your pasta to boil in some salted water according to package instructions.

Put on a pan on medium heat add in 2tb of olive oil and your onions. Give it a good fry till fragrant and translucent.

Add in your garlic as well as 1ts of chili flakes and give it a good mix around. You should now have a pan which smells like the HEAVENS, or Hell.

Add in 1 tin of peeled plum tomatoes, 2 cups of spinach and let it simmer till the pasta is a minute from the suggested cook time.

Season the sauce with salt and pepper to taste, plop in your fish fillets and let it simmer for 30 seconds.
10.
Add in your pasta to the sauce and give it a VERY gentle mix and continue to simmer till a thick sauce emerges and the fish is fully cooked.

Plate up with some freshly chopped parsley and enjoy your quick light fishy meal.
