What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.

TURKISH EGGS
Let's talk about eggs. There are so many ways to enjoy these little guys - scrambled, fried, poached, baked - the list goes on and on. But if you're looking for a new way to enjoy your eggs that's both easy and unique, then you're in luck. Allow me to introduce you to my Turkish eggs recipe, complete with sausages for an extra dose of protein. Now, I know what you're thinking. "Turkish eggs? That sounds a bit fancy." But fear not, my friend. This recipe may sound exotic, but it's actually quite simple to make. All you need are a few basic ingredients: eggs, sausage, butter, garlic, paprika, and some fresh parsley. Oh, and some crusty bread for dipping, of course.

The star of the show here is the eggs, which are poached to perfection in a delicious and aromatic sauce made from butter, garlic, and paprika. And let me tell you, once you've tried eggs poached this way, you'll never go back to boring old fried eggs again.But that's not all. To take things up a notch, we've added some tasty sausages to the mix for an extra protein boost. And the best part? This dish is versatile enough to be served for breakfast, brunch, or even dinner.

2 Eggs

1 Cup Greek Yogurt

1ts Dill
4.
1ts Chili Flakes of Choice

1 Clove of Garlic

1ts Butter

1ts Smoked Paprika

2 Sausages of Choice

Fried Shallots

Sour Dough Bread

GOOOD MORNINGGGG, let us scoop out 1 cup of greek yogurt into a bowl.

To that add in 1ts of dill, 1 grated garlic, salt and pepper to taste and give it a good mix. Your yogurt base is now done, set aside.

Set your sausages to cook either on a pan or in the oven up to you.

Now to make a spiced butter, in a pan heat up some butter till it just starts to brown over medium low heat. Add in 1ts of chili flakes of choice, I used Ancho, 1ts of smoked paprika, salt and pepper. Give it a good mix and turn off the heat and let the flavours infuse.

Poach 2 eggs in your preferred method.

Time to plate, lay down your yogurt sauce making sure to create little wells. Lay down your sausages, followed by a quick drizzle of your spiced butter and finally your 2 perfectly poached eggs and top it off with some fried shallots and extra smoked paprika.

Toast up some sour dough bread and get dunking
